3-4 chicken breasts, sliced into thin slices
3 bell peppers (red, green, yellow or orange), thinly sliced
1 large onion. thinly sliced
2 medium tomatoes(cut into medium chunks) OR 1 can diced tomatoes w/ chiles
Prepare 1 pan on stove w/ approx. 1/4 cup olive oil, dump peppers and onion into pan. Prepare a second pan on stove w/ approx. 1/8 cup olive oil, dump sliced chicken into pan. To the chicken, add garlic salt, seasoning salt, onion powder, Mrs. Dash Chicken. I just dump, so I would suppose I'm adding approx. 1/2-1 tsp of each. Maybe more. Once chicken is completely cooked through, add tomatoes or the can of diced tomatoes to the chicken, turn to lower heat. Once the peppers/onion are soft and translucent and the chicken/tomato has had time to cook for a bit, add the chicken/tomato mixture to the peppers/onion and let simmer for 5 minutes or so. Serve with Mama Lupe's low carb tortillas, guacamole(mash up an avocado), low fat sour cream, shredded cheese. VERY yummy!
