Yields: 4 servings
4 - 10-in flour tortillas (mama lupa's brand - low carb)
1 - 1 1/4oz. pkg. dry fajita seasoning mix
4 green onions
6 oz. cooked chicken breast meat, diced
1 - 15oz can diced tomatoes w/ peppers & onions
3/4 cup shredded low-fat mexican cheese blend
2 cups mixed salad greens
1 Tbsp chopped fresh cilantro or 2 tsp dried cilantro
Preheat oven to 400. Heat a grill or grill pan to medium-high & spray w/ cooking spray. Line a baking sheet w/ aluminum foil. Spray the tortillas w/ cooking spray and place on baking sheet. Sprinkle w/ 1 tsp. the seasoning mix. Bake until crisp, 6-7 minutes. Heat a large skillet over medium heat. Add the chicken, the remaining seasoning mix, and the tomatoes to the skillet. Bring the mixture to a boil and reduce heat to low. Simmer for 5 minutes. Remove from heat and stir in 1/2 cup of the cheese. Place one tortilla on each of four plates. Top w/ salad greens and the chicken mixture. Sprinkle on chopped up green onions and remaining cheese and the cilantro.
