Easy Egg Omelet
3 eggs
1/2 cup shredded colby jack cheese (or any cheddar)
salsa
Beat 3 eggs in a bowl. Lightly spray pan w/ olive oil, pour eggs into pan. Cook evenly on both sides, add shredded cheese to one 1/2 of the omelet, fold in 1/2, allow cheese to melt before taking off stove. Place on plate and pour salsa over the top. Serve w/ whole grain toast.
