Scrambled Eggs w/ English Muffins

Cooking spray
1 onion, chopped (small onion)
4 cups baby spinach
4 large eggs, lightly beaten
8 large egg whites, lightly beaten
1/4 cup grated parmesan (the kind you get in the bag)
2 whole grain english muffins, halved

Heat a large nonstick skillet over medium heat and spray w/ cooking spray. Add the onion to the skillet and saute until translucent, 1-2 minutes. Add the spinach and cook until wilted, 1-2 minutes. Add eggs, eggs whites, and parmesan. Scramble until set, 3-4 minutes. Toast the english muffins while the eggs are cooking.
Makes 4 servings
