Two 6-inch whole grain pita breads
1/2 cup prepared marinara sauce
8 oz. cooked chicken breast meat, diced (I do extra chicken for more protein)
1 - 15oz. can artichoke hearts in water, drained & quartered
4 oz. feta cheese crumbles, about 1/2 cup
Preheat the oven to 375. Line a baking sheet w/ aluminum foil. Place the pitas on the baking sheet and spread each pita w/ 1/4 cup marinara sauce. Top each pita w/ chicken, artichokes, and feta cheese. Place in the oven and bake until the cheese is melted, 5-6 minutes. Remove from oven. Cut each pizza into fourths and serve each person two pieces.
*note quantities of marinara sauce & quantities you eat - both help in keeping sugars/carbs low.
